1. Ingredients: Before the event starts, the winemaker will carefully select high-quality glutinous rice, barley malt and water to ensure the taste and quality of the wine.
2. Washing: Rinse the glutinous rice with water to remove impurities and odors.
3. Steaming: Put the washed glutinous rice into a large pot and add an appropriate amount of water to steam until the glutinous rice becomes soft and glutinous.
4. Stirring: Put the steamed glutinous rice into the brewing barrel, add the wheat malt and an appropriate amount of water, and stir well with your hands.
5. Fermentation: The mixture is sealed in vats and fermented at a suitable temperature. The fermentation process usually takes a period of time, during which the wine gradually becomes cloudy.
6. Filtration: After fermentation, pour the brewed rice wine into the filter to remove impurities and sediment, making the wine clear and transparent.
7. Bottling: After filtration, pour the rice wine into a clean bottle, and add a certain proportion of glutinous rice fermented rice to make the wine more mellow.
8. Bottle sealing: Seal the bottle full of rice wine to ensure that the wine will not be contaminated by the outside world.
9. Storage: After the bottle is sealed, the rice wine needs to be stored for a period of time to allow the wine to further age and enhance the taste.
